In Shrek the movie, our beloved ogre has to protect his treasured swamp home. Understandably, swamps probably don’t bring to mind culinary inspiration. Except when it comes to food created for kids. In that case, it’s chocolate “dirt” and gummy worms, or the “green stuff” my grandmother used to make for Sunday dinner (I believe it’s called Watergate salad, pistacchio mousse with marshmallows–totally delish.) Or, you could create a refreshing dessert for your Shrek movie night: a swamp sherbet float with a bubbly, “swampy” appearance that is deceptive, because it tastes scrumptious.
It’s easy to make too, no need to go to great lengths, and you’ll be a hero to the kids! Here’s how you make it:
A frosted mug
Lime or rainbow sherbet
Lemon lime soda
For the whipped cream:
3/4 cup whipping cream
2 tablespoons sugar
1 teaspoon clear vanilla extract
green food coloring
For the whipped cream, mix together the cream, sugar, and vanilla. Beat with an electric mixer until peaks form (hint: chill the bowl and the beaters beforehand). Add drops of the green food coloring to achieve the desired green color.
Add your sherbet and lemon lime soda to the chilled mug–it will be bubbly! Top with the green whipped cream and green sprinkles. Enjoy and celebrate!
